Pumpkin Cupcakes

2 cups white sugar
3/4 cup vegetable oil
1/2 cup applesauce
1 t. vanilla
2 cups canned pumpkin
4 eggs
2 cups flour
3 t. baking powder
2 t. baking soda
1/4 t. salt
2 t. ground cinnamon
1/2 t. nutmeg
1/2 t. cloves
1/4 t. ginger

Directions:

Preheat oven to 350 degrees.

Sift together flour, baking powder, baking soda, salt and spices.  Set aside.

In a large bowl combine sugar oil and applesauce.  Blend in vanilla and pumpkin, then beat in eggs one at a time.  Gradually beat in flour mixture.

You can bake this as a cake or cupcakes.  I have done both and love them either way.  For a cake bake for 30 minutes.   For cupcakes about 14 minutes.  You know the drill, check them with a toothpick or if you are like me, a fork.  I never have toothpicks laying around!

Cream Cheese Frosting

2 (8 ounce) packages of cream cheese
1/2 cup softened butter
2 cups powder sugar
1 t. vanilla

Cream cream cheese and butter together until creamy.  Mix in vanilla and powder sugar.

You will love these!
